CALDERON

PAELLA @ SAN JUAN

After a few days of no meat in Lenten Season, we decided to treat ourselves (me, mom and tito winston
) with a very luscious dinner in a restaurant. We initially planned to dine in at Cafe Lidia at Marikina, but it closes at 10:30 pm. It's already 8 pm and we're still here in Tondo, we might not probably make it. So, we decided to have our dinner somewhere close. Then mom mentioned Calderon located in San Juan. The restaurant closes at 10 pm but it's nearer and we made a pre-order of paella, since it takes 20-40 minutes to be cooked. So it will be ready by the time we get there.

I first heard and tasted their Paella Negra when my mom brought some of it at home. It's very flavorful. I so loved it that I'm tempted to eat it alone, not wanting to share it with others hahaha.

CALDERON

Owned by Monchet Carballo, Marmi Perez and Angela Melo, Calderon opened its first branch in F. Calderon Street Sanjuan on December 2012. The restaurant is fairly new, but they are in the food industry for a long time already.

Calderon specializes in Spanish Cuisine and their specialties are mainly paella and tapas. It has two floors and has the capacity of 40 pax, 10 pax on the ground and 30 pax on the second floor. They also have a balcony on the second floor for smoking area. It opens at 11:30 am and closes at 10 pm.

MENU

We ordered two types of paella and one tapa

Salpicao

Marinated beef tenderloin cubes. The meat is so soft that it almost melts in your mouth when eaten. It's topped with fried garlic bits.

Paella Valenciana & Paella Negra

Paella Valenciana
Paella Negra
We ordered two paellas so that we can find out which is better. Paellas are served in 3 sizes:
Pequeno 24" (good for 2-4 persons)
Mediano 34" (good for 8-10 persons)
Grande (good for 20 persons)

We only ordered Pequeno sizes each for both. Paella Valenciana is P780. Paella Negra is cheaper at a price of P680 but better.

Paella Valenciana is a tomato based rice dish served with chicken, prawns, mussels and vegetables.

Paella Negra is a rice dish cooked in squid ink served with prawns and "according to their menu" tangy aioli Sauce. Their Aioli Sauce is quite different yet familiar......then I realized at the end of meal that they used japanese mayonnaise rather than your regular mayo. It actually goes very well with the paella

They have the third type of Paella which is Paella con Setas, Manchego Y Trufa Esencia. Nosebleed? Translation: Paella served with mushrooms, manchego cheese and truffle essence. I'll try this the next time I'll visit here.

AMBIANCE

The place is cozy. They store their wine below the staircase. Didn't get the chance to take a picture on the second floor as there are guests upstairs. They might accuse me of being a stalker or paparazzi haha.

Price

Average Check per person here is P400-P500. It's quite pricey, but worth it.

They are also planning to open up their second branch in Kapitolyo, Pasig. Their target date is June this year.

HIGHLY RECOMMENDED!
